While they resemble an onion, the “wild onions” are actually wild tassel hyacinth bulbs (muscari) that grow in the Puglian countryside. They grow almost exclusively in Puglia and are a traditional dish that heralds spring.Collected at the end of the winter, it is a laborious task to clean and cook these bitter pink bulbs.
